各位大哥大姐們~~最近突然很想吃牛肉麵~~想要試著自己滷一鍋牛肉~~可是不清楚牛腱的英文是什麼~~怕買錯肉就糗大~~有哪位善心人士願意告訴我牛腱的英文是什麼嗎??~~先謝了

我本以為牛腱是Beef Shin.是不是我搞錯啦﹐請各位大哥大姐指教。

If you want to save money, use Chuck roast, it is cheaper but works okey for 牛肉麵 and 滷牛肉.

回bubblycat牛鍵是beffshin確定是正確,我是住在加拿大,有一次去肉店買牛鍵那個老闆教我的.還寫給我看,所以你是對的.

shank -- (a cut of meat (beef or veal or mutton or lamb) from the upper part of the leg)
shin -- (a cut of meat from the lower part of the leg)

一般來說,在美國的grocery stores只有beef shank (maybe shin is the British or Canadian term??).我住美國十幾年了,我通常是買shank作滷牛鍵, 但作牛肉麵我也覺得可以用chunk roast(比較tough),滷過後效果還不錯.
