一般來說,在美國的grocery stores只有beef shank (maybe shin is the British or Canadian term??).我住美國十幾年了,我通常是買shank作滷牛鍵, 但作牛肉麵我也覺得可以用chunk roast(比較tough),滷過後效果還不錯.
