I made 5 times according to below recipe and never succeeded.
無蛋沙拉醬的做法如下:
奶水1/2杯 .白醋2~3大匙 .細砂糖3大匙 .鹽1/4小匙 .白胡椒粉少許 .水1大匙 .大豆沙拉油2杯
將以上所有材料除了沙拉油外 .全部放進乾淨且乾燥的打蛋盆中打勻至濃稠 .在慢慢將沙拉油倒入打勻(這裡要很小心 .剛開始時可以用小湯匙一滴一滴的慢慢滴進去.但攪拌的動作千萬不能停 .如果前面都很順利的乳化了.也就是沒有油是油.水是水的感覺.油加入1/3以後的油就可以多一點倒入了---這個攪拌的方法也很適合用於一般的基本沙拉醬的打法喔 .)祝成功
Now, I am going to offer a recipe of 無蛋沙拉醬 which I just made and it's almost the same as what we usually buy in market. It's quite easy. You don't need to worry about the problem of 油是油.水是水.
240 公克的水
35 公克白醋
55 公克 細砂糖
50 公克玉米粉 (corn starch)
在鍋中拌勻後,加熱煮至呈透明狀時即
可離火繼續攪拌;等稍微降溫後,即可將240 公克的olive oil、6公克鹽, 奶水374 ml (1 bottle)
慢慢分次加入拌. That's it.
(notes: I use "brown suger", so it's yellowish. By changing a little ingrendients, it's 早餐店的透明沙拉醬", "no egg" also; the details issued on 2005-10-16 by "vero" at the title "標題:早餐店的沙拉醬怎麼做")
I created this recipe based on 大頭菜"早餐店的透明沙拉醬"dated 2000-06-08. And I did it. It's wonderful. Thanks 大頭菜.
